Remove set number of numbers at the beginning of a list of files

I have a large number of files each of which begin with a different seven digit number followed by a - (dash).
I would like to remove all of the numbers and the dash from each file name and replace them with nothing.
It seems this should be a very simple task with this wonderful utility, but I have not been able to figure it out.

Couldn't you just use the Remove Method ?
